Date Caramel & Peanut Butter Chocolates
Ingredients

- 1 ½ cups of pitted dates
- ¼ cup honey
- ¼ cup coconut milk
- 1 teaspoon vanilla
- ½ cup peanut butter
- 3 tablespoons honey
- 1 bag of chocolate chips
Instructions
- Melt chocolate chips in a microwave safe dish for about 1-2 minutes or until fully melted.
- Take your heart shaped silicone mold and drop in 1 teaspoon or so of chocolate into each heart then push it up the sides with the end of a wooden spoon. Place in the freezer to harden.
- In a blender combine dates, ¼ cup honey, coconut milk and vanilla and blend until smooth. Place date caramel into a ziploc bag and set aside.
- In a small bowl combine peanut butter and 3 tablespoons of honey then place that in a separate ziplock bag.
- Once chocolate molds are hardened, cut off the tip of both ziplocks and first pipe in some date caramel, then the peanut butter mixture.
- Then take your remaining melted chocolate and fill the rest of the mold. Place in the freezer to harden!
- Store in the freezer or fridge and enjoy!

What kind of Chocolate did you use? Semi sweet, milk or dark?
I used dark but you can use whatever you like!
Hi Kelsey! I am so confused on the what to buy when a recipe calls for Coconut Milk. Is there a difference between coconut milk and coconut cream? Is it supposed to be all chunky or should it be smooth and milky? Help! Can you give a link for the kind you use in the recipe?
Just coconut milk in the can! You usually have to scoop it all out into a microwave safe jar and heat up for like 20 seconds then shake it up to combine! Or put the can in warm water for a bit and shake.
These were so good! I used the silicone mini cupcake liners instead of heart shaped molds and they turned out wonderfully!

These are so good! You do not need a cute heart mold–I used muffin tins with silicon cupcake liners (they looked like Reese’s)! I used enjoy life chocolate and this recipe was easy and so yummy! I first made them for valentines day but now they are a staple that I store in the freezer and pull them out anytime I want a quick treat that I don’t feel too guilty about.
