This Paleo Winter Citrus Cake is simple to make, grain free, dairy free and perfect for any occasion!

Winter Citrus Lemon Cake

Ingredients

  • 3 cup Almond Flour
  • ¾ cup Arrowroot Flour
  • ¾ tsp Baking Soda
  • ¾ tsp Baking Powder
  • ¼ tsp salt
  • ½ tsp cinnamon
  • ½ tsp cardamom 
  • 1 tsp lemon zest
  • ¾ cup Coconut Sugar
  • 3 tbsp lemon juice
  • 3 tbsp Blood Orange juice
  • ¾ cup olive Oil
  • 3 eggs
  • ¼ cup applesauce
  • 2 tsp vanilla extract
  • Icing*

Instructions

  • Preheat oven to 350 degrees.
  • Combine all ingredients together in a medium bowl and stir until well combined.
  • Spray a 9 inch cake pan with oil spray and line with parchment paper.
  • Pour batter into the prepared pan and bake for 40-45 minutes, until lightly browned on top.
  • *For icing you can buy a vanilla frosting from simple mills or miss jones (as pictured) or just do the citrus icing:  1 cup powdered sugar + 3 tbsp lemon or blood orange juice
