It’s almost Christmas!!! And although the holiday season has so many great moments and fun, the best part is always Christmas morning.  Both Milo and Ruth are loving the holiday season, especially with the advent calendar daily happenings. From hot chocolate dates, board game nights and surprise waffles after looking at Christmas lights, they have loved the something fun and festive throughout the month. Since we know Christmas morning can be incredibly hectic and busy this Christmas Morning Charcuterie board is perfect and will bring a new festive tradition.

I packed this board with two types of pancakes – gingerbread & peppermint chocolate chip!  Then you fill it in with some bacon, sausage and fruit and of course serve a nice helping of whipped cream and butter on the side.

The best part is you can totally make all of this stuff the day before if you want.  Heck you can make pancakes this week and freeze them! Just put you oven to 350 and lay them in an ever layer for 8-10 minutes until they are warmed up.  You can also cook bacon in the oven – or maybe even make Maple Pepper Bacon!  No matter how you do it, do it with love and Christmas cheer! 🙂

Oh and always serve with a large side of maple syrup and coffee, lots and lots of coffee!!

Ingredients

  • Pancakes
    • For Gingerbread:
    • Your favorite pancake mix + all of the ingredients it calls for
    • 1 tbsp molasses
    • ½ tsp ground ginger
    • ½ tsp cinnamon
    • ¼ tsp nutmeg
    • ¼ tsp cloves
    • For Peppermint Chocolate Chip:
    • Your favorite pancake mix + all of the ingredients it calls for
    • 1 tsp peppermint extract 
    • ⅓ cup chocolate chips
  • Banana
  • Strawberries
  • Mint
  • Whipped cream
  • Butter
  • Bacon
  • Sausage

Instructions

  • Pancakes
    • For Gingerbread: Add 1 tbsp molasses + 1/2  tsp ground ginger + ½ tsp cinnamon + ¼ tsp nutmeg, + ¼ tsp cloves to the batter of your favorite pancake mix with the rest of the ingredients the package calls for.   
    • For Peppermint Chocolate Chip: Add 1 tsp peppermint extract + ⅓ cup chocolate chips to the batter of your favorite pancake mix with the rest of the ingredients the package calls for.   
  • Once pancakes, bacon and sausage are cooked, place them in piles on a board or large platter.
  • Add a bowl of whipped cream and a small plate of butter slices.
  • Fill in the spaces with fruit – I used bananas, strawberries and raspberries but you can use any fruit you like!
  • For extra Christmas spirit you can add in mini candy canes, mint sprigs and even sprinkles!

Notes

  • To make this board paleo – use paleo pancake mix (that’s what is used in these photos), as well as coconut whipped cream!
