These Nut-free oatmeal energy bites are naturally sweetened and nut free so they are great to add into a lunch box for any school lunch!

I am so excited to share a nut-free snack option for your kiddos lunch box or just for you to snack on!  Ruthie’s school is nut free but I usually make energy balls (that she loves) with almond flour, so I knew I had to make a version that I could put in her lunch box.  These Nut-free Oatmeal Energy Bites are super basic and full of energy for kiddos! I made this batch large so you can stock up, but they go quick in our house.  Energy balls are just my favorite because we keep them in the fridge or freezer and they are the perfect thing to grab when you find yourself staring in the fridge looking for a little something to hold you over until dinner.  I’ve made these twice now and the second time I made them with Ruthie next to me in her learning tower.  I used a rubber spatula to scoop the dough off the sides and stuff and she grabbed it so fast and devoured everything on it!  I am already teaching her the beauty of licking spatulas and it’s a beautiful thing.  Now go run to the kitchen and whip these up and tell me how much you love them!

Nut-Free Oatmeal Energy Bites

Ingredients

Scale
  • 2 cups pitted medjool dates
  • 3 tbsp maple syrup
  • 2 cups quick oats
  • ½ cup oat flour
  • ¼ cup refined coconut oil
  • ¼ cup water
  • ½ tsp vanilla extract
  • 1 tsp cinnamon
  • ½ tsp ground ginger
  • pinch of salt

Instructions

  • In a food processor add dates and maple syrup and blend on high until the dates break down and form a paste. 
  • Add in oats, oat flour, coconut oil, water, vanilla, cinnamon,  ginger and salt and blend until it forms a ball.
  • Scoop into balls and place them in the refrigerator.

  2. These were super quick to make although my food processor didn’t do a good job of mixing them so I did that by hand. Hubby and I were looking for a simple, yummy snack and these hit the spot. Not too sweet and after a couple we were satisfied. Will definitely make again!

  4. I made these for my daughter to take in her lunch since her school is nut free. They came together super quickly and were a hit with my 4 and 2 year old. I I thought I’d need to add chocolate chips to make them more appealing to my kids but they gobbled them right up without them. had to add just a tiny bit more water than what the recipe called for to make blending easier. Great recipe!
