Banana Prune Oatmeal Bake
Ingredients

- 2 and 1/4 cups Bob’s Red Mill Old Fashioned Rolled Oats
- 2 tablespoons flax meal (ground flax seeds)
- 1 tablespoon chia seeds
- 1 teaspoon baking powder
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1 cup ripe mashed bananas (about 2 large bananas or 3 medium bananas)
- 3/4 cup almond milk
- 1/4 cup maple syrup
- 1 large egg
- 1 teaspoon vanilla extract
- 2 prunes, chopped
Instructions
- Combine all ingredients in a bowl and pour into a square pyrex dish that has been lightly oiled.
- Bake at 350 degrees for about 35 minutes.
I have tried a bunch of recipes for baked oatmeal and this one is the best! It holds together and is so yummy. I have made this a bunch of times now. My 14 month old is so picky and throws SO MUCH FOOD (including oatmeal sometimes) but he loves this cake! It works for muffins, too, I’ll just bake them for not quite as long.
