Banana Prune Oatmeal Bake
Last week I wanted to prep some food for Ruthie to have on hand throughout the week and tried out an oatmeal bake! I had brown bananas so I knew I wanted to add those and when I serve her bananas I usually also give her some prunes to balance out the constipating nature of bananas in babies. So I chopped some up and added them in and voila – we have Ruthie’s new favorite snack! I love having a pre-made snack/ breakfast on hand for her because she is a hungry little girl. The fun thing about these oatmeal bakes is that you can totally personalize them for you or your kiddo! Add chocolate chips to make it a treat or add some nut butter and freeze dried strawberries for a pb&j.
I also added in chia seeds and flax meal to up the good omegas and nutrition. It can be so easy to add stuff like that into kiddos food and they never know the difference. I plan on sharing more recipes like this that you can prep on Sunday and have on hand for kiddos all week because DANG these kids keep us moving. Now that Ruth is crawling she is all over the place and when she’s hungry she is HUNGRY! So having stuff like this in the fridge or pantry is crucial.
If your kiddo doesn’t like the consistency of the prune, you can blend the banana and prunes together in a blender before adding them to the mix!

Banana Prune Oatmeal Bake
Ingredients
- 2 and 1/4 cups Bob’s Red Mill Old Fashioned Rolled Oats
- 2 tablespoons flax meal (ground flax seeds)
- 1 tablespoon chia seeds
- 1 teaspoon baking powder
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1 cup ripe mashed bananas (about 2 large bananas or 3 medium bananas)
- 3/4 cup almond milk
- 1/4 cup maple syrup
- 1 large egg
- 1 teaspoon vanilla extract
- 2 prunes, chopped
Instructions
- Combine all ingredients in a bowl and pour into a square pyrex dish that has been lightly oiled.
- Bake at 350 degrees for about 35 minutes.

Just put this in the oven to bake. 6:45am here on the east coast and couldn’t sleep (3rd trimester insomnia ) but excited to see how they come out. I just realized I forgot the egg!

I took some liberties with the original recipe and it still came out fantastic! Half-ed the recipe (I have a 4 year old with autism and a 2 year old that’s leaning hard into her “no” stage so I have some notoriously picky eaters and didn’t want too many leftovers if things didn’t go well), still used one egg, doubled the prunes, used apple sauce instead of bananas and tossed in some Herseys cinnamon chips for added pizzazz. It came out pretty soft but still holds a bar shape well enough to grab and go!!

Yes you can!
These were amazing!! I left out the prunes because I didn’t have any. Served it warm, topped with fresh blueberries and warm almond milk. Incredibly delicious breakfast!!

I’ve made these a handful of times and they are so tasty and easy to throw together! Kid and adult approved! I added 2Tbs mini chocolate chips and YUM! Drizzled some peanut butter on top too.

If I double the recipe, do I double the cook time? I am currently making a double batch and flying by the seat of my pants with the time. 🙂
It probably won’t be double time, you can use a bigger pan and add a bit more time, just bake until it is slightly browned around the edges!
What could I substitute for flax meal? 🙂
You can just leave it out!
I made this last minute into a cinnamon apple raisin version. Worked great! Tripled the cinnamon, 3/4 cup raisins, and didn’t have chia or flax on hand. Yum!

I gave this recipe 5 stars because it’s a good base for a banana prune oatmeal bar. I’ve made it 3 times, changing it each time to my liking. The recipe is good as is, but it can be versatile. I added 1 more Tbsp flaxseed and chia, half a cup more bananas, 1/4 cup more almond milk, used agave instead of maple syrup, added 8 more prunes, and added 1/2 cup of sliced almonds. My wife, 18 month, and 16yr old all love it. Even my co-workers liked.

Such an easy recipe. Made these for my 3yo and added a few chocolate chips on top. And I modified the recipe, leaving out the maple syrup and blending the banana/prunes together, so my 6mo twins could have for BLW. (Also, added in a little almond flour for a nut exposure). Will definitely add this recipe to my recipe binder. Also love that the prunes can help keep everyone regular!

I’m assuming you store this in the fridge when you eat it over the course of the week? I plan to freeze some too, but I wasn’t sure if people were leaving it on the counter or fridge for the short term.

These are a weekly staple! So delicious. We add whatever extra fruit we have and switch it up. We freeze the leftovers. The kids heat them up add some milk and it’s delicious oatmeal ready to go.

My husband was having constipation issues, so I googled some breakfast treats with prunes and found this recipe. I added 2 more cut up prunes. I think I might add pumpkin seeds, walnuts and cranberries to it next time! :0) We have organic chickens (farm fresh eggs), so I thought this would be a good recipe to have with fresh eggs in the morning! Thanks for the recipe…very versatile recipe to have on hand.

I have tried a bunch of recipes for baked oatmeal and this one is the best! It holds together and is so yummy. I have made this a bunch of times now. My 14 month old is so picky and throws SO MUCH FOOD (including oatmeal sometimes) but he loves this cake! It works for muffins, too, I’ll just bake them for not quite as long.
