HAPPY NEW YEAR!! I thought it was appropriate to start off this January morning with one of my favorite breakfasts – DIY breakfast sausage. Last year I made these Caramelized Fennel & Date Chicken Sausages and they blew my mind a little so I wanted to make another version! I love to make things as easy as possible so I just use dried herbs and pre-minced garlic for these, and you can use either ground chicken or turkey. I made a batch of these a few weeks ago and froze them for January because microwaved breakfast is my game plan for this Whole18. Yes you read that right, i’m doing a Whole18!

Now let’s talk resolutions, are you doing them? I only have one measurable one and that is to get a financial planner and figure out my finances! Being my own boss and small business owner without a 401k anymore, we definitely need some help figuring out how to spend our money and where to put it – so adult! Other than that I just want to keep my child alive, go on all of our fun trips we have planned this year (scottsdale, new york, cabo, hawaii), and as always workout and eat well. LET’S DO THIS 2019!!

Whole30 Garlic Herb & Apple Breakfast Sausage

Ingredients

  • 1 pound ground turkey or chicken

  • ½ teaspoon minced garlic

  • ½ cup minced apples

  • ¼ teaspoon rubbed sage

  • 2 teaspoons dried parsley

  • 1 teaspoon salt

  • ¼ teaspoon pepper

Instructions

 

  • In a medium sized bowl combine ground turkey or chicken, minced garlic, apples, sage, parsley, salt and pepper. Stir or mix with hands until fully combined.
  • Bring a pan over medium high heat and spray with oil spray or a little drizzle of oil. Scoop chicken into small patties and press them down in the pan with the back of a spatula (if you put some oil on the back of the spatula it shouldn’t stick!). Cook for about 2 1/2 -3 minutes per side. Enjoy!

    I made these yesterday and ate a few for breakfast immediately and just reheated them perfectly for breakfast at work. I doubled the recipe after looking at the initial comments and I added a dash of cayenne and nutmeg to the mix because why not? When I make these again I’ll swap the fresh garlic for garlic powder. I’m not the biggest garlic fan and think it would be more subtle (and easier to mix in) using powdered next time. I used Kelsey’s awesome spatula trick to flatten the sausages and then pan fried them in avocado oil for 2 minutes per side and finished them off in a 350 oven for 10 minutes or so until they were cooked completely – this also enhanced their growing.     These are so good, and easy! Perfect to have a quick bite. Thanks for the recipe! I freeze them after a few days and just microwave for a minute.
