Spinach & Almond Flour Waffles
Ingredients

- 1 cup unsweetened vanilla almond milk
- 1 1/2 cups spinach
- 2 cups blanched almond flour
- 1/2 cup arrowroot flour
- 2 tsp baking powder
- 1 tsp ground cinnamon
- 1/4 tsp salt
- 1/4 cup pure maple syrup
- 3 tablespoons melted ghee
- 2 eggs
- 1 tsp pure vanilla extract
Instructions
- Add almond milk and spinach into a blender and blend until spinach has broken down and almond milk is green! Â Add all of the remaining ingredients to the blender and blend until completely combined.
- Turn on your waffle iron and once hot, spray with some oil spray to grease. Â Fill your waffle iron appropriately for its size and cook according to your waffle irons instructions or until the waffles are lightly browned!
Have you tried it in pancake form?? Love the waffles but hate cleaning my iron.

These were delicious and perfect for St Patrick’s day! I was a little short on almond flour so I used a little less than half a cup of coconut flour and I was a little short on arrowroot, so I used 1/2 arrowroot & 1/2 tapioca and they still turned out great!

I had them saved for ever in my Instagram and I just tried them today. I didn’t put any maple syrup or cinnamon in the batter because I wanted to eat them with an egg as well and they were amazing! They went well both with savory and sweet flavors. They just taste as normal waffles. Congratulations for the great recipe!
