This Greek Turkey Meatloaf is whole30 compliant and super easy to whip together any night of the week!

Don’t worry I haven’t forgotten about Meatloaf Monday!! I just needed to pause to make those tasty chocolatey muffins and dipped cookies for valentines week, but now we are back in business.  This meatloaf comes straight out of my love for greek flavors.  Dill, oregano, sun dried tomatoes and ALLLL of the tahini sauce makes my heart so very happy.  It’s the reason I have already make Slow Cooker Greek Chicken and Greek Stuffed Turkey Burgers!  Don’t be distracted by the fact that the tahini sauce looks like icing on a cake (which many people mentioned to me on instagram), because you must try this meatloaf!  Is there anything better than mixing  bunch of stuff in a bowl and plopping it on a baking sheet?  Easiest meal ever.   You guys know I am team ground turkey – a lean meat that you can mix tons of flavor into that also doesn’t break the bank.  WINNING!

By the way  – I don’t know about you but I have been loving the Olympics!! Figure Skating and anything snowboard related have been my favorites but watching anyone compete at such a high level is just incredible to me!!  I wonder if there could be a blogging or cooking olympics… actually never mind that sounds like Chopped on food network which just stresses me out.  I’ll just stay in my kitchen for now! 🙂  Okay let’s get to this meatloaf.

Greek Turkey Meatloaf {Whole30}

Ingredients

Scale
  • 1 pound ground turkey
  • ¼ cup almond flour
  • 1 egg
  • 1 teaspoon garlic powder
  • 1 teaspoon dried dill
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • ¼ cup chopped sundried tomatoes (in oil, drained)
  • ¼ cup minced red onion
  • ¼ cup chopped sliced black olives
  • Topping:
  • ¼ cup tahini
  • 1 tablespoon apple cider vinegar
  • 2 tablespoons water
  • 1 teaspoon garlic powder
  • salt to taste
  • pepper to taste
  • Some sliced black olives

Instructions

  • Preheat oven to 400 degrees.
  • In a large bowl combine turkey, almond flour, egg, garlic powder, dried dill, oregano, salt, pepper, sundried tomatoes, red onion and olives. Mix together with clean hands until evenly combined.
  • Ball up all of the meat mixture and place on a foil lined baking sheet, then form it into a loaf shape, about 8 inches x 4 inches in shape.
  • Bake for 30 minutes.
  • While the meatloaf cooks make your tahini topping.
  • In a small bowl combine tahini, apple cider vinegar, water and garlic powder. Add some salt and pepper to taste.
  • Once meatloaf is done cooking, let it sit for about 5 minutes, then spread the tahini sauce over the top.  Sprinkle with some slices olives and enjoy!
