Meatloaf MONDAAYYYY!!! I’m really hoping you said that in an Oprah voice… if not, please go back and do so.  Thanks!  I am super pumped about this meatloaf because Pot Pie Flavors are my favorite. I’ve made Chicken Pot Pie Soup, Tuna Pot Pie, Chicken Pot Pie Casserole AND Chicken Pot Pie Twice Baked Potatoes…. so yeah you could say i’m into it.  So I thought it was about time to mix my favorite flavors with our go-to weeknight meat – ground turkey!  We use ground turkey all the time because we can get a couple at Trader Joe’s on a Sunday and can make everything from meatloaf to meatballs to burgers all week long.  What makes pot pie flavor you say?  I think the essentials are thyme, rosemary, carrots, potatoes and peas (except I use chopped green beans a lot to make it whole30 compliant!).

My sis and her hubby are and it’s reminding me how hard it is! If you are doing one  – PROPS.  I am very glad I decided not to do one however because this prego lady needs her bread more than ever.  Okay okay back to this meatloaf – hope you love it!

Turkey Pot Pie Meatloaf {Whole30}

Ingredients

  • 1 pound ground turkey
  • 1 egg
  • ¼ cup almond flour
  • 1 teaspoon chopped fresh thyme
  • 1 teaspoon chopped fresh rosemary
  • 1 teaspoon salt
  • ¼ teaspoon black pepper
  • ½ cup chopped carrots
  • ½ cup chopped green beans
  • 1 cup peeled and chopped russet potatoes
  • 1 tablespoon avocado oil
  • pinch of salt

Instructions

  • Preheat oven to 400 degrees.
  • In a large bowl combine turkey, egg, almond flour, thyme, rosemary, salt and pepper.
  • Place a large skillet over medium high heat and add oil to the pan.  Then add carrots, green beans and potatoes.  Cook for 5-7 minutes or until they start to soften and brown slightly and season with a pinch of salt.
  • Set aside ½ cup of the cooked vegetables and add the rest to the turkey mixture.  Combine all of the ingredients in the bowl with your hands or a wooden spoon until equally combined.
  • Form turkey mixture into a loaf shape on a foil lined baking sheet. Top the loaf wit the remaining ½ cup of vegetables.
  • Bake for 30 minutes and enjoy!
