Feeling a little over the winter weather?? I can’t say I am as winter hasn’t hit southern California yet, but I know most of you have been dealing with crazy low temps!! And it had been in the 50s and 60s here on occasion which is pretty cold for me. So what I love to do when it’s cold is try to imagine it’s not. Like making a delicious and fresh parfait! I teamed up with Winter Sweetz to make a super simple, sweet and tart breakfast. Winter Sweetz makes the best grapefruits down in Texas – super juicy and sweet! The best thing Winter Sweetz taught me? How to segment grapefruits! A lot of the bitter flavor that comes with grapefruit is located in the white pithy part. So I watched this video on how to segment the grapefruit and it takes out all of that pith, resulting in the best piece of grapefruit you’ve ever had!
I am also loving that lately you can find coconut milk yogurt all over the place!! I like to have yogurt on occasion but steered clear of it for the past few years because too much dairy makes Kelsey’s stomach upset… but alas! There are now both coconut and almond milk yogurts out there that are so tasty. You can also get them flavored so they don’t taste like coconut if that isn’t your jam. I got a vanilla coconut yogurt for this but you can use whatever you like! A touch of honey makes the grapefruit extra tasty and I love to layer it with grain free granola – this one I got on Thrive Market.

Grapefruit & Coconut Yogurt Parfait
- 2 grapefruits, cut into segments
- 2 tablespoons honey
- 1 cup coconut yogurt
- ½ cup grain free granola
- Combine grapefruit segments and honey in a saucepan over medium heat for about 3 minutes, while stirring to break down the grapefruit a bit. Remove grapefruit wit a slotted spoon and set aside in a bowl.
- Leftover honey and juice will remain in the pan, continue to cook for about 5 more minutes until the juice reduces and becomes thick. Pour back on top of the grapefruit and stir to combine. Place in the fridge to use later or for at least 10 minutes while you get your other ingredients ready.
- Take your cup or bowl and add ¼ cup yogurt, then a spoonful of grapefruit mixture followed by ⅛ cup grain free granola. Repeat those one more time.
- Makes 2 parfaits!
