Banana Bread is one of those things you just NEED to make when you see browning bananas on your counter.  Eariler this week I went to Trader Joes and picked up 4 bananas that looked like they were about to turn brown – ya know that super yellow, no green in sight color?  Well I swear from the time i put them in my cart to the time I took them out of my bag at home, they were completely covered in brown spots!!  It was insane.  Not sure if it was getting out of the cold store or if they just knew that they were destined for banana bread greatness.  So although I hadn’t really thought yet about what I would make with them, it was go time and I had to think on the spot.  I opened my pantry and saw my cashew butter eyeing me and basically saying “oh hey baby” to the bananas.  It was a match made in pantry heaven.

These guys are grain free thanks to our friends almond flour and coconut flour, and have NO SUGAR in them – just ripe bananas.  The only sugar in this recipe is a little coconut sugar I mixed with cashew butter and drizzled on top but that part is optional! 🙂   The best part?  My nephew who is 18 months absolutely loved them!!  He is loving carbs these days so I was pumped that he gobbled them up not knowing they had lots of good nutrients in them!  I also took these to my friend Jen’s for Galentine’s day and they got alllll of the thumbs up! YAHOO!  Oh and did I mention you just throw all the ingredients in a food processor? Yep. WINNING!!

Cashew Butter Banana Bread Bars {Grain Free}


Ingredients

Scale
  • 2 cups mashed ripe bananas
  • 4 eggs
  • 1/2 cup cashew butter
  • 4 tablespoons melted ghee or coconut oil
  • 1/4 cup coconut flour
  • 1/4 cup + 2 tablespoons almond flour
  • 2 teaspoons cinnamon
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder (look for gluten free to make paleo)
  • 1 teaspoon vanilla
  • pinch of sea salt
  • 2 tablespoons chopped cashews
  • 1 tablespoon cacao nibs (optional)

Cashew Frosting:

  • 1/4 cup cashew butter
  • 2 tablespoons coconut sugar

Instructions

  1. Preheat your oven to 350 degrees. Combine your bananas, eggs, and nut butter, and ghee in a high powdered blender or food processor and mix well.
  2. Once all of your ingredients are blended, add in your coconut flour, almond flour, cinnamon, baking soda, baking powder, vanilla, and sea salt and mix well.
  3. Pour your batter in a 8×8 inch pyrex dish that has been greased with oil spray. Sprinkle on the cashews and cacao nibs. Place in your preheated oven and bake for 40 minutes or until a toothpick inserted into the center comes out clean.
  4. To make frosting, combine 1/4 cup cashew butter and 2 tablespoons coconut sugar and microwave for 30 seconds to get it to a drippy consistency. Drizzle over the banana bread bars, slice and serve!
