Say it with me, 2 MORE DAYS!!  2 days left of this grain free, sugar free, dairy free, alcohol free 30 days that I will have completed twice!  Super proud of my hubby and I!  At day 16 we were so close to running to the store for wine and whiskey but we stayed strong!  Now if you know the Whole30 you know the idea of “SWYPO” – and if you don’t, just google it. 🙂  I feel like these bites could qualify for that but I really made them as a snack vs. something to curb a sugar craving.  I made these the other night by just throwing a bunch of stuff in a food processor and was shocked at how freakin tasty they were.

So the next day I measured it all out and put together this post for you!  I keep these babies in the freezer so when you pop one out it takes awhile to get through and you can’t just eat 3 in one sitting – at least easily!  I like having them if I wake up and want to run to the gym before breakfast or to hold me over until dinner.  With all of the nuts and seeds in these there are tons of healthy fats to fuel a workout.  I use this cookie scoop to make the balls perfect and they are nice and crunchy in texture which I love! Nutty Seedy Cacao Bites

Ingredients

Scale
  • 1/2 cup cashews
  • 1 cup almonds
  • 1 cup pitted dates
  • ¼ cup hemp hearts
  • 2 tablespoons chia seeds
  • ½ cup cashew butter
  • ¼ cup Cacao nibs
  • 3 Tablespoons water
  • large pinch of salt

Instructions

  1. In a food processor combine cashew and almonds and pulse a few times until nuts are ground up into small pea sized chunks. Then add dates, hemp hearts, chia seeds and cashew butter and blend until everything is ground up and combined. Then add cacao nibs and start blending while pouring water in the top until it comes together in a ball. Then season to taste with some salt and pulse to combine. Scoop the dough into balls and roll them in your hands to make them smooth. Place them on a parchment paper lined baking sheet or plate and place in the freezer. Once frozen you can put them all in a large ziploc bag and store in the freezer or fridge depending on how hard you like them. Enjoy!

  1. I just modified the recipe using what I had on hand which is a bag of Energy club Fancy Mojo Mix..it is peanuts, almonds, sunflower, pumpkin seeds and raisins and some chocolate pieces. I added chia seeds and some cacao nibs. It worked out great. Will try the original recipe when I have the other ingredients…but wanted to let you know it works with other nuts/raisins. I did not have any cashew butter, and it was ok without it. If that had not worked I would have tried to add a bit of coconut oil

  2. I made these the other night during my first Whole30 (I know, shhhhhhhhh, “sex with my pants on” is FINE), and they were so delicious I really felt like I was cheating. I didn’t measure anything, but eye-balled it for a half batch sans cashew butter because I was too lazy to run to the store, but OMG they were so good FROZEN, I am going to make these for my unborn children in the years to come as secretly healthy dessert/snack balls. Thank you!
