Fennel is so hot right now.

Oh wait. Maybe its just me… in my condo at 7 PM and its at least 90 degrees.  OH HAY SUMMER! This summer is going to be a challenge in our 3rd floor, vaulted ceiling, death trap of an oven we call our home.  Don’t get me wrong I am SO lucky to live near the beach in southern California… but for those 6-8 certain weeks sprinkled throughout June to October, I struggle.  Anywho, a good breeze just hit me so let’s move on to this HASH!

Fennel really is so hot right now!  I love the flavor and it goes perfectly with bacon and potatoes.. but what doesn’t?  I was going to chop some of these veggies (which you totally can), but once I got the food processor going to shred the potatoes, I thought throwing all of the veggies in there would make my life easier.  And thats what breakfast is all about!  There is one key factor for this whole thing to really taste like bacon. You must cook the veggies in the bacon grease.  TRUST ME ON THIS!  This will create the best flavor and the actual bacon pieces really just become a bacon accent.

I cooked this hash for a majority of the time in a pan, then threw it under the broiler for a final crisping touch.  Then topped everything with a fried egg because… #protein.

Bacon Fennel Hash


Ingredients

Scale
  • 4 slices bacon
  • 1 medium onion, grated
  • 1 bulb of fennel, grated
  • 1 medium red pepper, grated
  • 1 green bell pepper, grated
  • 2 large russet potatoes, peeled & grated
  • salt and pepper

Instructions

  1. After grating all of your veggies, add them to either a flour sack cloth or cheesecloth and ring it out until most of the liquid is removed. Cook bacon in a large skillet over high heat until cooked but not yet crispy. Remove bacon from the pan and add in onion, fennel, bell peppers and potatoes. Cook for about 10 minutes, stirring often until cooked through. Season with salt and pepper to taste. Then to make it crispy, turn on your broiler on high and pour the hash onto a baking sheet. Spread it into an even layer and broil until crispy, about 5-7 minutes. Chop the bacon and add it on top for the last 2 minutes to crisp it up! Enjoy with a fried egg for a full meal!
