Breakfast Sweet Potat-“Oats”
Are you ready for the world as you know it to get ROCKED? Sweet Potato Oatmeal. That’s what is UP!
I promise it’s for the good! But first I have a confession to make. I kind of miss oats & oatmeal. I don’t miss getting hungry again 2 hours later… but I miss eating something warm and cinnamony in the morning! Don’t get me wrong… I still love my eggs and chicken sausage most days. BUT after making these babies I am so excited to mix it up!! I was walking with Matt last weekend and telling him about my idea and about what to call them and he said “SWEET POTAT-OATS!” It was brilliant. And again – this is why I married the guy. Let’s break the internet shall we?
I love sweet potatoes in every form but sweet is one of the best! Adding cinnamon was a must as it reminds me of my oat days, and adding banana was a no brainer as I also used to add it to my oats as a natural sweetener! I mean what would Sweet Potato Oatmeal be without cinnamon!? Make sure those bananas are nice and brown for this so they can bring the dish lots of sweetness. The best part about this recipe is the TOPPINGS! I loved adding sliced banana, walnuts and a drizzle of almond butter… partially because it made the photos super drool worthy, and partially because I put AB on just about everything to make it better. If you are staying away from grains or just want to mix up your regular breakfast routine… try this recipe out STAT! OH- and I also made a fun video of recipe for you to gander at below!

Nutrition for Sweet Potat-Oats (Oatmeal)
What a perfect substitute for oats when you are following a paleo or grain free diet. As we all know, sweet potatoes are very nutritious and are jam packed with Vitamin A and Vitamin C as well as fiber. A lot of people are concerned when going grain free about not getting enough fiber. This recipe for Sweet Potato Oatmeal (Oats) is packed with fiber from both the sweet potatoes and the nuts! You just have to try this out, especially if you are craving something warm and cinnamony in the morning!

Ingredients
- 1 cup sweet potat-“oats” (directions below)
- 1/3 cup crushed ripe banana (about 1 medium banana)
- 1/4 cup almond milk
- ½ teaspoon cinnamon
- Pinch of salt
- Top with: banana, walnuts and/or almond butter
Instructions
- In a small bowl combine sweet potat-“oats”, banana, almond milk, cinnamon and salt. Microwave for about 3 minutes or until cooked. I topped mine with sliced banana, walnuts and a drizzle of almond butter!
- *To make Sweet Potat-“Oats”:
- Peel 1 sweet potato and run it through the shredder attachment on a food processor. Then add the blade attachment and pulse for a few seconds just until sweet potato resembles the size of oats! Use 1 cup of these “oats” for the recipe.

This is hands down the best Whole 30 meal I’ve had in my 26 days (and counting). I put a poached egg on top with a little Himalayan Sea Salt and it’s DELICIOUS!

Hi Amy! I haven’t tried stove top but I am sure you can cook it over the stove top until the sweet potato is cooked! I will try that out soon and report back 🙂

Oh my gosh, you’re the first person I’ve seen to eat things like this too. My go-to now is to roast a butternut squash, scoop out the flesh into containers, and eat it topped with nuts, berries, cinnamon, paleo granola, bananas – whatever is on hand like that. In the summer it’s tasty cool, in the winter, it’s nice heated up like porridge. It’s great to roast it on Sunday and have it the rest of the week for breakfast (sometimes need to freeze). Maybe that will also be an interesting option for those who like you sweet potat-oats 🙂
Do you cook the sweet potato?
The sweet potato cooks in the toaster! 2-3 rounds on high will cook it through with a little browning!
I wanna bring this to work tomorrow for breakfast. Could I mix it at home tonight, put it in the fridge, and then heat it at work? Then put the toppings? Would it break down or be okay?
I’m pretty sure it would be fine!! Sweet potatoes hold their shape well before being cooked! Let me know how it works out!!

Could you make ahead and if so how long would it stay fresh in fridge? Maybe freeze?
You can shred the sweet potatoes ahead of time but I wouldn’t make the actual mixture more than 1 day ahead of time!

Not sure if this was mentioned in the above comments or not, but what would be the best way to cook these without a microwave? would it just turn to mush on the stove? this looks wonderful. I was craving steel cut oats all during my Whole 30, and after I finished I made a big batch, and could barely eat 2 bites! I felt fine, but I just didn’t feel like eating grains. I’ve tried a couple more times since, and they just don’t do it for me anymore. I love something warm and cozy and cinnamony though! I’m excited to try these!

Do you have any suggestions for a banana replacement in the oats portion of the recipe? I can’t tolerate bananas well.
This is so good! Im really impressed with the oatmeal-ish texture. I used coconut milk, and after it cooked I stirred in half of a scoop of Dr. Meyers pumpkin spice paleo protein powder and it was delicious! Hmm… now Im wondering how this would work in a bigger batch. I used to love baked oatmeal before I had to drop grains, I wonder if I could uses these sweet potatoes to make a version of that!

Cool idea, I grated the sweet potato and cooked for 20 minutes in homemade cashew milk, yum!
Why is your sodium content so high? 100% of RDA in one meal is crazy and also doesn’t seem accurate. 🙂 just sayin you might want to review that.
