Garden Herb Crusted Chicken Tenders - Two Moms in The Raw Garden Herb crackers crushed for the coating! Paleo & Whole 30!

By now you guys know I love chicken tenders.  I don’t know if it’s the tenders themselves or just the act of eating with my hands but they bring me so much joy! I was wanting to make this batch super flavorful and crispy so I knew breadcrumbs or crushed crackers would be amazing.  BUT I wanted them to be paleo so… insert Two Moms In The Raw Garden Herb Crackers!  These babies are made of flax seeds, fresh herbs, spices, kombu and sea salt.  They are super clean and packed with flavor!  The wonderful people at Two Moms sent me some of these crackers and I was so excited to put them to use.  I have always loved Two Mom’s nut and granola bars but now they have these crackers and new cereals so the clean food snack options are endless!

These chicken tenders are so simple to whip together.  Thanks to all of the flavor in the crackers, there is no need to use any spices but a little bit of salt and pepper.  Besides those all you need is chicken and eggs!  Search their store locator HERE and you can find some Two Moms near you. They are at all kinds of health food stores like Whole Foods & Sprouts!  Oh and remember the Avocado Chimichurri I made this week?  Yeah that was for these tenders!!  So many herbs in this business and so little time.  This whole meal is perfect for kiddos too – what kid doesn’t like tenders?  Just cut them into smaller pieces and call then nuggets with green dip!

Garden Herb Crusted Chicken Tenders


Ingredients

  • 8 chicken tenders
  • 4 oz crushed garden herbs crackers from Two Moms in the Raw
  • Salt and pepper
  • 2 eggs
  • Coconut oil spray

Instructions

  1. Preheat oven to 400 degrees and place a cooling rack on a baking sheet. Add crackers to a food processor and pulse until they are pulverized into crumbs. If you don’t have a food processor you can put the crackers in a large ziplock bag and crush them with a wooden spoon or a large pot. Place those cracker crumbs in a bowl. In another bowl, break eggs and beat them until combined.
  2. Sprinkle a little bit of salt and pepper to the chicken tenders (just about a pinch for all of them). Then, one at a time, submerge the chicken tenders in egg until coated, shake off excess, then coat in cracker crumbs until fully coated. Spray the cooling rack with coconut oil spray and lay the coated tenders on top. Then spray the top of the tenders with a bit more coconut oil spray and place in the oven for 10 minutes. Remove them from the oven, flip them over, and spray once more. Finish cooking for another 10 minutes. Let sit for about 10 minutes and serve!
