Ranch Steak Salad

Herb Ranch Mix:

  • 2 teaspoon dried dill
  • 2 teaspoon dried parsley
  • 3 teaspoons dried chives
  • 2 teaspoon garlic powder
  • 2 teaspoon dried basil
  • 1 teaspoon sea salt
  • ½ teaspoon black pepper

Other ingredients:

  • 1 lb. Grass Fed Strip Loin Steak ( I get mine in the frozen section at Trader Joes!)
  • 1 tablespoon ghee
  • 2 tablespoons mayo (whole30 approved!)
  • 2 tablespoons light coconut milk
  • 3 cups chopped kale
  • 3 cups mixed greens

Instructions

  1. Combine herb mix ingredients in a spice/coffee grinder or regular blender. Pulse on high a few times just so the herbs mix gets nice and equally ground. I do this because the dried chives are so much larger than the other herbs and I like them to all be equal sized to cover the steak properly.
  2. Preheat oven to 375 degrees. Take steak out of the fridge/ freezer and let sit out a bit or defrost until it is no longer cold. Pat the steak dry and rub 1 teaspoon of ranch mix on each side (2 teaspoons total). Put a cast iron skillet over medium high heat and let it get nice and hot. Put ghee in pan to melt. Once ghee has melted, place steak in pan and sear on both sides for about 30 seconds to 1 minute each side or until nice and golden. Then put the skillet in the oven for 10 minutes. Remove pan and place steak on a cutting board, tent with foil and let rest for 10 more minutes.
  3. In a small bowl combine 2 teaspoons of the ranch mix with 2 tablespoons of mayo & 2 tablespoons of light coconut milk. Pour that dressing over your greens in a large bowl and top with sliced steak. Enjoy!
