Chocolate Coconut Kahlua Balls

Let’s talk about how much I need a candy thermometer.  It is on our wedding registry but it’s so hard to wait!! During the holidays I always want to get crazy and make candies and be that awesome candy lady that everyone loves.  I guess I can be the awesome cookie and cake lady… but I digress. When you don’t have a candy thermometer you can make all other kinds of treats like truffles and KAHLUA BALLS!!  These are such simple treats that have a sweet boozey taste that screams holidays!  They kind of taste like those things in a See’s Candies box that you can’t figure out what it is but you know you want more. Does that make sense?  Anywho. And I don’t know about you but to me, sprinkles make everything better!

Ingredients

  • 1 1/2 cups powdered sugar
  • 4 tablespoons unsalted butter, softened
  • 1/4 cup of Kahlua
  • 1 cup chocolate chips
  • 1 tablespoon coconut oil
  • sprinkles

Instructions

  1. Combine sugar, butter and Kahlua in a bowl with a mixer until well blended. Cover and chill for at least four hours or until firm. Remove from the refrigerator and scoop 1 tablespoon into your hand and form a ball. Place balls on a parchment paper lined cookies sheet and place back in the fridge to keep cool. Meanwhile, in small bowl, combine chocolate chips and coconut oil. Microwave for about 1 minute and 30 seconds, or until chips are melted and combined with the oil. Remove balls from the fridge and dip in chocolate to coat. Place back on parchment paper and top with sprinkles. Place back in fridge until ready to enjoy!
