Oh Trader Joes. You are so mesmerizing. I don’t think I can ever leave without trying something new or buying whatever there was a sample of. Matt and I went last weekend just to grab a few things. We were almost at the checkout when the end cap hit me with these coconut cashews. Oh brother. I just love coconut. I had to try them… and coincidentally I bought these cashews the same week I got a new blender. This blender is so great for my small kitchen. It is compact, has 4 to go cup attachments, a bigger blender cup, a chopping cup and 2 blades! I was reading through the recipe book it came with and it said you can make nut butter in the chopping cup. My mind couldn’t handle the fact I had delicious coconut cashews and I had a device to make nut butter. Lets just say I had Coconut Cashew Butter on toast for dinner. And it was delicious. Please go to trader joes now!! And if you don’t have a TJs just let me know and i’ll send you some (britt!).
Add those babies to your chopper with some oil.
Blend until creamy!

Coconut Cashew Butter
- 1 cup coconut cashews (from Trader Joes)
- 1 tablespoon canola oil (or vegetable or coconut!)
- Combine cashews and oil in blender or food processor. Pulse 6 times for 5 seconds each, then blend until smooth.
