Ta Da!  And welcome to the first day of the 12 days of cookies!!  Cookies are the best to make around the holidays because they travel well and usually stay good for a couple days so you can make them ahead of time.  I am constantly trying to think up or find recipes that are easy and a bit different in order to keep the taste buds excited.  I pinned the recipe to these on pinterest a couple days ago and got 39 repins in a day!  That is pretty good for me, so I thought I would give them a shot.  I was a little skeptical at first because there are no eggs, but alas, they really did melt in my mouth!  Slightly crunchy yet tender and just fell apart in the best way possible.  Oh and did I mention they are very simple to make?

First mix up your dough, it will seem like it isnt going to come together at first…

But just keep mixing until it looks like this!

Then once it is nice and doughy, drop into rounded tablespoons on an ungreased cookie sheet.

Then place the bottom of a cup in powdered sugar, and press down on the dough.

Then pop them in the oven for 10 minutes!

They get nice and flat and pretty… then you make the cream cheese frosting…

Oh yum, then spread that goodness on the cookies and enjoy!!

  • cookie:
  • 1 cup butter
  • 3/4 cup cornstarch
  • 3/4 cup powdered sugar
  • 1 cup flour
  • frosting:
  • 1 (3oz) package cream cheese, softened
  • 1 cup powdered sugar
  • 1/2 tsp. vanilla

Instructions

  1. Preheat your oven to 350 degrees. In a medium bowl, cream butter until light and fluffy. Add cornstarch and powdered sugar and beat until combined. Beat in flour until thoroughly mixed. Drop by tablespoon onto ungreased baking sheets. Flatten dough with the bottom of a cup (dipped in powdered sugar to prevent sticking). Bake for 10 -12 minutes. Cool on wire rack and frost with Cream Cheese Frosting.
  2. For the frosting, combine all ingredients together in a mixer fitted with a paddle attachment. Color with food coloring if desired.
