Smashed Cauliflower Tots

Its Wednesday!! Here is a quick list of things to do to get you through this hump day.

6) Make some cauliflower tots!  Then smash them!

They are very simple to make, but at the same time can be easy to mess up.  First you have to make cauliflower rice.  You do this by chopping up cauliflower and cooking it in the microwave.  Mine took about 8 minutes to cook.  Then toss that into a food processor untill there are no chunks and it is fine.  The next step is most important.  You MUST try  to get out as much of the water from it as possible.  I took paper towels to it until I ran out of them… and probably could have gotten a lot more out.  Next time I might used cheese cloths and just squeeze away!  Then i mixed that with one egg, one egg white, some salt and pepper, and a half a cup of cheese.

Then I preheated the oven to 425 degrees.  I sprayed a cookie sheet with PAM, then scooped the mixture on with a small ice cream scooper.  I tossed them in the oven for 10 minutes, then took a spatula and flipped them, and smashed them down just a bit.  Then I cooked them for about 7 more minutes.  I then served them with a tomato basil sauce to dip them in!

 

Smashed Cauliflower Tots

Ingredients

  • 3 Cups Cauliflower Rice
  • 1 Egg
  • 1 Egg white
  • 1/2 Cup Shredded Cheese
  • Salt & Pepper to taste

Directions

Preheat oven to 425 degrees. Combine all ingredients. Scoop mixture with small ice cream scoop (about 1/4 cup) onto a greased cookie sheet. Bake for 10 minutes. Take a spatula and flip the tots, then smash them just a bit. Continue to cook for 7-10 more minutes. Serve with a tomato sauce for dipping.
