 Lemon, Blueberry & Poppyseed Loaf

Ingredients:

Batter:
1/4 cup butter, softened
3/4 cup granulated white sugar
1/2 cup vegetable oil
2 eggs
1/2 cup plain Greek style yogurt
1 tbsp lemon zest (takes about two lemons)
1 2/3 cups all-purpose flour
2 tsp baking powder
1/2 tsp salt
3 tbsp poppy seeds
1 cup Blueberries (+ 1 tsp. flour)
Icing:
2 tbsp. lemon juice
1/2 cup. powedered sugar (possibly more or less depending on how thick you want icing)

Directions:
Preheat oven to 350 degrees (F), start the batter by creaming the butter and the sugar in the large mixing bowl of my stand mixer.  Add the oil, eggs, yogurt, and lemon zest and beat well until smooth. In a separate mixing bowl, whisk together the flour, baking powder, salt, and poppy seeds.  Gradually add the dry mixture to the wet mixture and beat well until smooth.  Mix 1 cup of rinsed blueberries with 1 tsp. flour to coat.  Fold blueberries into the batter. The batter was poured into a greased loaf pan and baked until a toothpick inserted in the centre came out clean (between 55-65 minutes).
To make icing, mix 2 Tbsp. With about 1/2 of powedered sugar.  You may need to add more sugar or for juice depending how how thick you like your icing.
Pour the icing over the warm loaf once removed from the oven.  Let cool, then slice and enjoy!
