Fun Fact about me: I love where I work.  I have great co-workers and they all support my love for baking.  And I’m sure only 80% of that is because I bring them delicious treats.  My office is the perfect group of guniea pigs to try out new recipes on, and it helps to have somewhere to bring my treats so they don’t sit at my house slowly expanding my waistline.

They also have recently discovered that I love making elaborate fondant cakes.  The one up there ^^ I made for a friend at work for her birthday.  Another fun fact about me, I love the color combination of yellow, gray, and white.  LOVE.

Anyways, once I made this cake, another co-worker asked if I could make a cake for her daughter’s 9th birthday party.  I was so excited to make another cake and I started planning right away.

When she decided on a theme for the cake I could not have been more excited. Justin. Bieber.

THE BIEBS!?  I think we all have a special place in our hearts for him because he is just too cute!  Although his boyfriend video makes me feel a bit awkward… why are these mature women touching the little baby like that?

ANYWAYS, back to the cake.  Of course the first thing I did was Google “Justin Bieber cakes,” and was impressed by a few but knew I could really capture the Biebs’ essence in cake form.  A few days of brainstorming and a triple batch of buttercream later:

 

Fondant is really just incredible!  Special shout out to my boyfriend for volunteering his hands and rolling all of the black balls (hehe!).  The cake on the inside was chocolate cake and a simple vanilla buttercream.  Pretty AND Delicious,  just how I like it.

Chocolate Cake with Vanilla Buttercream


Ingredients

  • Cake:
  • 1 package Chocolate cake mix
  • 1 (3.4 oz.) package instant chocolate pudding mix
  • 4 large eggs
  • 2 to 3 teaspoons instant coffee granules dissolved in 3/4 cup warm water
  • 1/2 cup vegetable oil
  • 1/2 cup sour cream

Buttercream:

  • 1 cup unsalted butter (2 sticks or 1/2 pound), softened
  • 34 cups confectioners (powdered) sugar, SIFTED
  • 1/4 teaspoon table salt
  • 1 tablespoon vanilla extract
  • up to 4 tablespoons milk or heavy cream

Instructions

  1. Preheat oven to 350 degrees.
  2. Lightly grease and flour your cake pan, whether it be round, square, rectangle, or cup!
  3. To prepare cake, combine cake mix, pudding mix, eggs, coffee mixture, oil, and sour cream in large bowl; beat on the high speed of a electric mixer for 2 minutes. Pour into prepared pan. Bake 40 minutes or until toothpick inserted in cake comes out clean. (Baking time varies depending on pan; set your timer for 30 minutes and check from there!)

  6. Beat butter for a few minutes with a mixer with the paddle attachment on medium speed. Add 3 cups of powdered sugar and turn your mixer on the lowest speed until the sugar has been incorporated with the butter. Increase mixer speed to medium and add vanilla extract, salt, and 2 tablespoons of milk/cream and beat for 3 minutes. If your frosting needs a more stiff consistency, add remaining sugar. If your frosting needs to be thinned out, add remaining milk 1 tablespoons at a time.
