This Mexican Cauliflower Rice is the perfect way to enjoy the authentic mexican rice flavors with a healthy twist!

Hey guys it’s Mexican Cauliflower Rice MONDAY!!! Oh you didn’t know that was a thing?  Well I just decided it’s a thing.  After last week’s sweet potato toast week I just want every day to be themed I think.  But I am super pumped to share this recipe with you because it is one that I was thinking of ever since Vital Proteins (my fave collagen company) came out with their new Bone Broth Collagen powder!  Over the last month or so I have been limiting my coffee a bit and just trying not to have it every day.  I know coffee can mess with adrenals and cortisol levels so I just wanted to back off a tad as I was coming to rely on it too much/ having 2-3 cups a day then not sleeping great.  Now I have it sometimes during the week and then usually on weekends.  In turn, my collagen consumption wasn’t as automatic as it is when I put it in my coffee!  I try to have tea and add it in there but sometimes just forget all around.  SO I have been trying to add it to other dishes when I can so I don’t loose my smooth skin which it has given me!  

To be honest I never jumped on the drinking bone broth straight up train.  I know there were benefits, aka -collagen which I already have covered, and the savory sipping just wasn’t my jam.  But putting broth into dishes is a whole other story!!  This is honestly why I love this powdered bone broth.  Do you know how many times I have opened a carton of chicken broth, used a cup, just to have the rest spoil because you have to use it within 7-10 days of opening?!  It’s the worst.  So now I have my tub of Vital Proteins to turn to when I need that chickeny flavor added to a meal!  You can mix it with water to make your broth for sauces and such but for this recipe I just added it straight into a tomato sauce mixture to replicate mexican rice.  I don’t know if you have had authentic mexican rice but it is unreal!  It usually calls for bouillon to add that savory salty flavor so that is what I knew would be great for the bone broth to come in!  This simple side dish would be a great base for a burrito bowl and is totally Whole30 compliant. YAY!

Mexican Cauliflower Rice

Ingredients

Scale
  • 20 ounces cauliflower rice (frozen or fresh)
  • 1 tablespoon olive oil
  • ½ cup tomato sauce
  • 1 scoop Vital Proteins Bone Broth
  • 1 teaspoon garlic powder
  • ¼ teaspoon chili powder
  • Salt to taste

Instructions

  • Place a large skillet over medium high heat.  Add olive oil to the pan then cauliflower rice.  
  • Cook, stirring occasionally until rice is cooked through.  
  • While cauliflower is cooking, combine tomato sauce, Vital Proteins Bone Broth, garlic powder and chili powder in a small bowl.  
  • Once rice is done, pour in tomato mixture and stir to combine.  Cook for another minute then salt to taste.  
  • Garnish with cilantro if desired!
