Caprese Grilled Cheese

 There is one thing that a great grilled cheese relies on. DELICIOUS BREAD.  This crusty sourdough was perfect for the taste I wanted out of this sandwich.  Caprese salad is amazing.  Bread is ridiculous.  Lets put one in the other and have the best day ever.  I am now thinking it would have been a really good idea to dip this in balsamic vinegar… next time!

First line up those beautiful ingredients.

Ingredients

Scale
  • 2 slices of sourdough bread
  • cooking spray
  • 3/4 cups mozzarella cheese
  • 5 basil leaves
  • 3 slices tomato

Instructions

  1. Turn a skillet on medium high heat. Spray one side of bread with cooking spray and place on the pan. Top with 1/2 cup of cheese and let cook until cheese melts. Once cheese melts place the basil leaves on top, followed by the tomato. Then sprinkle on the other 1/4 cup of cheese followed by the other piece of bread. Spray that side with cooking spray and flip the sandwich. Cook until bread is browned and cheese is melted. Enjoy!
