Asian Turkey Lettuce Wraps

Let me start off by saying GO USA!!!  I am loving these olympics and have been struggling with how late I am willing to stay up to catch all the good stuff.  And although I would love to only enjoy “American Food” throughout this 30th olympiad, I have come to realize that the most American thing to do would be to eat multiple cultures cuisine on a daily basis.  And although I am sure lettuce wraps are American with a few asian inspired ingredients, I will let it count.  I have never made lettuce wraps and am so happy I did.  They are very simple and super healthy!  Low-carb and tasty?!  Yay!

First you cook up your ground turkey with a little ginger and garlic.  Then you chop up green onions and water chestnuts and mix them all together.

Then just mix up a quick sauce.

Then pour that sauce over the meat and toss to coat.

Scoop your mixture onto pieces of iceberg lettuce and enjoy!

Creamsicle Cupcakes

Do you remember not so long ago when I made an Orange Creamsicle Cake? Do you remember me saying how ridiculously good it was?  Well when I had the chance to recreate it, I knew it was the perfect time to try out these cute little popsicles on top.  I saw this on Pinterest awhile ago and thought it would just make perfect sense to pair them with the creamsicle cake.  All you do is cut the ends off of a tooth pick, and stick them into orange Mike N’ Ikes!  I might have had to eat the rest of the green, red, yellow and pink ones, but it was all in the name of cute cupcakes!  My sister’s friend was having a baby shower and I knew they would be lovely for a mommy to be and friends!

Homemade Magic Shell

When I first saw that you could make your own magic shell I thought, blasphemy!   A hard chocolate coating makes everything better, especially ice cream.  So I thought I would give it a try.  It is pretty terrifying how easy it was, and just knowing it is in my fridge right now is exciting.  All you have to do is take chocolate chips and coconut oil and melt them in your microwave!

Microwave it for about a minute.  Then stir and melt for 30 seconds more if needed.

Then I poured it into a spare squeeze bottle we had.

Then just pour over ice cream and watch it freeze!

Homemade Magic Shell

1 1/2 Cups Chocolate Chips

1/2 cup Coconut Oil

Directions:

Melt Chips and Oil in microwave for 1 minute. Remove and let sit for 30 seconds then stir to combine.  If chips are not melted entirely, cook for 30 more seconds.  Pour over ice cream!

Cheddar and Black Pepper Biscuits

I had a new first yesterday!  I made biscuits for the first time.  It was suprisingly easy! I took lots of pictures so I instead of me rambling on about how to do it, just check it out…

Cut that butter into that whole wheat flour/sugar/baking powder/cream of tartar/ salt.

Pastry cutters make life easier.

Mo Chedda – Mo Betta?

Mix with some buttermilk and an egg to form a soft dough.

Knead it!

Roll it!

Cut them into circles using a biscuit cutter or circle cookie cutter.

Place on non-greased baking sheet.

Brush with heavy cream.

Sprinkle with black pepper.

Bake for 12 minutes at 425 degrees.

Then serve with butter…

Or make a breakfast sandwich with eggs and chicken apple sausage!

Smashed Cauliflower Tots

Its Wednesday!! Here is a quick list of things to do to get you through this hump day.

 1) Have a laugh.

2) Be amazed at these talented sisters.

3) Laugh one more time.

4) Get pumped again for the olympics! GO COURTNEY!

5) Try not to dance to this jam.

6) Make some cauliflower tots!  Then smash them!

They are very simple to make, but at the same time can be easy to mess up.  First you have to make cauliflower rice.  You do this by chopping up cauliflower and cooking it in the microwave.  Mine took about 8 minutes to cook.  Then toss that into a food processor untill there are no chunks and it is fine.  The next step is most important.  You MUST try  to get out as much of the water from it as possible.  I took paper towels to it until I ran out of them… and probably could have gotten a lot more out.  Next time I might used cheese cloths and just squeeze away!  Then i mixed that with one egg, one egg white, some salt and pepper, and a half a cup of cheese. 

Then I preheated the oven to 425 degrees.  I sprayed a cookie sheet with PAM, then scooped the mixture on with a small ice cream scooper.  I tossed them in the oven for 10 minutes, then took a spatula and flipped them, and smashed them down just a bit.  Then I cooked them for about 7 more minutes.  I then served them with a tomato basil sauce to dip them in!

Stuffed Bell Peppers

When I think of a low carb meal, I tend to get a little sad.  I really like bread. 

But there are a few meals that can actually be super delicious without half a bagette and a stick of butter.  Stuffed Bell Peppers are delicious because the meat cooks while in the pepper, so all of the good flavors are trapped in a healthy little package. I found a recipe on Bon Appetit’s website and made some healthy changes to it.

First you want to take your bell peppers, cut off the tops and take out the seeds.

Then to make the filling, just cook up some chopped onions and garlic in oil.  I added some salt, pepper, and a dash of thyme and oregano.    I added that to a mixture of ground turkey, salt, pepper, and all spice.  Then added tomato sauce, an egg, and some cooked rice.

You can use any kind of sauce and any kind of of rice (white, brown, wild), but I found these in the pantry and thought I would give them a try.

Then I took that mixture and scooped it into the bell peppers.

Then I placed them into a large pot and added 2 cups of tomato sauce into the pot around the peppers.  I brought the sauce to a boil, then turned it down to medium- low heat and covered the peppers for 20 minutes.

Once they had cooked a bit, I spooned some of the sauce over the peppers to coat them.  At this point the recipe suggested I keep cooking them in this pan, but I thought the oven would be more efficient.  I took out the peppers with tongs and moved them to a square pyrex dish.  I covered them with foil and baked them at 350 degrees for 20 more minutes.  They were perfect!  You can serve this with a salad or any side you like!  I served mine with cauliflower smashed tots (will post recipe tomorrow).

*Note:  This meal tastes A LOT better than it looks, so don’t get scared!

Pallet Coffee Table

 

We did it ourselves again!  I am so happy my boyfriend has found a new love for making pallet furniture with me!  Building something together is really a true test of a relationship.  It really causes you to hear each other and work together to create something beautiful.  He is also building a bar at his house now with pallet wood and it is turning out great!  We have slowed down our condo hunt, so by the time we do find a place, it will be completely furnished with pallet wood!  Can you say bargain shoppers?  If you can, you have to say it like this.  Haha BLs!

Anyways, here is another DIY with lots of pictures!  The only things we bought at Home Depot for this project was:

- 4×4″ 6 ft. Post (cut into 4, 1 1/2 ft. pieces)

- Box on 2 in. wood screws

- Red Mahogany Stain

Everything else we either had at home, or used Pallet wood!  First you have to decide how big you want your table.  We based ours on how long the one of the pallet’s wood was.  We then took 2 of the legs (the posts from HD), and screwed on a side apron to both sides.  We took a drill bit to it first, then screwed in our screws.

When we added these side aprons, we left enough room for our front and back aprons to fit.  Then we attached those.  We also added some gorilla glue between the pieces to ensure they stay put!

It is already looking like a table! yay!  Now you will be to add some support beams.  The amount is really up to you.  We had some pieces of wood from the middle of a pallet and thought they would be good supports.  We just used two and think it will be enough support to hold our drinks and our feet!

We screwed them in through the side support.

Then we did some more measuring of our middle top pieces and how much room we had to add our end pieces, and started screwing everything in!

 Then we freaked out for about 10 minutes because it was really coming together!  Sophie (the cute doggie) was so excited too! Then we sanded and stained…

Then we let that dry, and later on we added a coat of poly urethane to make it shiny and finished.  This picture was taken and night and I realize now it is aweful!

This morning we brought it inside to sit in its temporary home!

Cinnamon Sugar Candied Pecans

This recipe was once again inspired by my fathers love for pecans and cinnamon.  This love has now spread throughout the family and we all cannot get enough.  I found the recipe on Kevin and Amanda’s Blog.  For her it is a Christmas treat and for me it is now a staple in the house!  I have always wanted to find a recipe for candied pecans that was easy an full of flavor.  The cinnamon, sugar, and salt in this recipe come together with the nutty pecan to make an awesome treat that, although keeps well in an air tight container…. will be gone the next day.  I also wanted to make this snack for my parents to take on the plane when they fly to Helena, Montana today!  They are visiting my sister up there and could not be more jealous (Hi B!).

First, the line up.  (note to self, don’t take pictures of white sugar with a white background and direct sunlight)

 Mix up a couple egg white and a splash of water…

 Coat Pecans….

 Take sugar, cinnamon and salt.

 Pour over pecans, and coat.

 Pour those on a greased baking sheet.

 Cook for an hour at 225 degrees.

 Pour those onto wax or parchment paper.

 Try not to make your yellow lab Sophie too jealous… and maybe sneak her one pecan…

Cinnamon-Sugar Candied Pecans

Ingredients

  • 2 egg whites
  • 2 tbsp water
  • 1 cup sugar
  • 1 tsp salt
  • 1 tsp cinnamon
  • 4 cups (16 oz) pecans

Directions

Preheat oven to 225 degrees. In a large bowl beat the egg whites and water. Add pecans and stir to coat. Whisk together the sugar, salt and cinnamon, then pour over the pecans, stirring to coat. Spread pecans on a baking sheet that has been sprayed with cooking spray and bake for one hour, stirring every 15 minutes.

Nutter Butter Brownies

 I know I know, Peanut Butter and Chocoalte again!?  The answer to that is simple.  HECK YES!  In this never ending hunt for a condo, my dad and the guys at his office have been working hard, and guess what? They like Peanut Butter and Chocolate.   Who doesn’t?  I brought about 12 to Matt (the bf) and his partner at work last night, and then they got a call (they are EMTs), so I left.  5 minutes later I get a call and they said they were gone!  I suppose they liked them… I hope you do too!

>Line up:

Crush up your Nutter Butters.

Add butter and crush some more.

Scoop the nutter butter mixture into greased mini muffin pan, and press down with a shot glass.

Then cook the crust in a 325 degree oven for 5 minutes.  Then make some brownie mix!

 Scoop brownie mix on top of the nutter butter crust.

 Bake for 11 minutes!

 Yum… let these babies cool and then you will have to use a knife around them to fish them out of the pan.  Sometimes  greasing a pan is not enough!

 Make a quick peanut butter frosting and place a dollop on the brownie, then top with a mini Nutter Butter.

Nutter Butter Brownies

Ingredients

    Crust:
  • 1 pkg. Nutter Butters
  • 6 Tbls. softened butter
  • Brownie:
  • *Use any brownie recipe
  • Peanut Butter Frosting:
  • 1 cup confectioners' sugar
  • 1 cup creamy peanut butter
  • 5 tablespoons unsalted butter, at room temperature
  • 3/4 teaspoon pure vanilla extract
  • 1/4 teaspoon kosher salt
  • 1 Tbls. heavy cream
  • Mini Nutter Butter Cookies

Directions

Preheat oven to 325 degrees. Break Nutter Butters in half and place in a food proccesor. Crush cookies, then add 6 tablespoons of softened butter. Scoop into greased mini muffin pan about 1/3 of the way. Bake in the oven for 5 minutes. Meanwhile, mix together brownie batter. Remove crust from oven and scoop brownie mix into pan. Bake brownies for about 11-12 minutes. Let cool, then take brownies out of the pan. You may need to help the brownies out by taking a knife and working it around the pan.

For the frosting, place the confectioners' sugar, peanut butter, butter, vanilla, and salt in the bowl of an electric mixer fitted with a paddle attachment. Mix on medium-low speed until creamy, scraping down the bowl with a rubber spatula as you work. Add the cream and beat on high speed until the mixture is light and smooth.

Put the frosting in a piping bag and pipe a dollop of frosting onto the brownie. Place a mini nutter butter on top!

Lemon, Blueberry & Poppyseed Loaf

 Lemon and blueberry…. yum.   Lemon and poppyseed…. yumbo.  All 3 together!?  Are you seeing fireworks and dancing people? Is that just me?  I am so glad I decided to make this delicious loaf.  The berries give a nice burst of flavor and the lemon icing add a tart sweetness that is to die for.  Also, I used my dad’s awesome camera and have some nice quality pics to show you!

First, the line up. + flour & sugar.

 Cream up some butter and sugar.

 Once you add of our the wet ingredients, add your dry.

 Rinse off some blueberries…

Coat them with some flour.

 Take your beautiful batter,

And add in your blueberries.

 Fold them together…

 And place in greased loaf pan.

 Bake for about an hour…

 Then make an icing out of lemon juice and powdered sugar…

 mmmmmmm…

 Let the loaf cool, then remove from pan and enjoy!
